However, Saxelby graduated with a studio art degree from New York University.

Saxelby has been credited for assisting local farms and other cheesemakers in gaining other business options and expanding the cheese market in the U.S.

The pioneer cheese businesswoman went on to write her own books, “The Great Grace Escape” and “The New Rules of Cheese” in 2018 and 2020 respectively.
