raw material
- Boneless skinless chicken breast – High-quality organic chicken keeps this recipe clean. Pounding chicken breasts into ½ inch patties will help them cook quickly and evenly. I use 1.5-2 pounds of chicken breasts. This is equivalent to 3-4 chicken breasts.
- Italian seasoning, onion powder, garlic powder, salt and pepper – Before using chicken breast in any recipe, it must be seasoned.I have used a version of this simple spice blend most of my time Healthy chicken recipes.
- Cherry tomatoes – This chicken bruschetta is very flexible. You can use grape tomatoes, Roma tomatoes or chopped up your favorite tomato varieties. If you use more or less tomatoes, it won’t make any difference.
- Shallots – When I first started making this recipe, I did not add red onions to the mixture. But once, I did it and never looked back! The red onion roasted in the oven is delicious, especially when it is eaten with tomatoes, balsamic vinegar and garlic.
- Extra virgin olive oil, balsamic vinegar and grated garlic – This trio is the flavor basis of this recipe.
- Fresh basil -This adds a burst of freshness.
Cooking skills
You can keep bruschetta cool -If you like this method, it is best to mix tomatoes, onions, garlic, balsamic vinegar and basil one day in advance. Season and cook the chicken, then add bruschetta. But I recommend trying the chicken bruschetta that is baked at least once because it is so delicious.
You can use store bought bruschetta – This will taste a bit different because the ingredients are cut smaller and there may be other condiments, but it is still delicious.
Use your favorite chicken nuggets – I prefer boneless and skinless chicken breasts, but bone-in or chicken thighs are also ok. You may need to adjust the cooking time according to the cut and size. Regardless of the temperature, it takes 165 degrees to cook thoroughly.
Add fresh mozzarella cheese – I like to keep a low-fat recipe, so I don’t eat cheese, but if you want another layer of deliciousness, add a few slices of fresh mozzarella in the last few minutes of cooking. Or add some cold pieces of fresh mozzarella cheese to chicken bruschetta and zoodles or pasta.
Don’t use canned tomatoes – You can’t beat the taste of roasted fresh tomatoes; it made this recipe, so I recommend not eating canned tomatoes this time.
You can leave out the red onion -Or change to white onions, this is what you have. We like onions at home, but taking them out will not spoil the recipe.

How to make chicken bruschetta
- Preheat the oven to 375 degrees.
- First put the Bruschetta tomato mixture together. Mix tomatoes, onions, garlic, olive oil and balsamic vinegar in a large bowl. This is unnecessary, but if you can let the bruschetta sit for an hour or more, or even make it the next day, it will give the flavor time to marinate and infuse more flavor.
- Next, prepare the chicken breast. Trim excess fat or skin from boneless chicken breasts. Then, one at a time, place them between two pieces of plastic wrap or in a plastic Ziploc bag, and use a meat mallet to pound the chicken breasts into ½ inch thick pieces. You want chicken breasts to be relatively the same size, so they can be cooked evenly.
- In a small dish, mix Italian seasoning, onion powder, garlic powder, salt and pepper. Season the chicken breast with seasonings.
- Place the seasoned chicken breasts in a 9 x 13 ceramic baking pan.
- Pour the bruschetta on the chicken and put it in the oven for 45-50 minutes. After being thoroughly cooked, the internal temperature of the chicken should be 165 degrees Fahrenheit.
- Remove the chicken bruschetta from the oven and sprinkle with fresh basil. Serve hot with pasta, rice, zoodles or spaghetti squash.
